To follow up on our recent article about the new Polaris Genius roll in chiller range, lets explore exactly what the Genius range can do for your establishment with its versatility, flexibility and multifunctionality all in a single appliance.
Genius is the multifunctional solution that helps keep the kitchen in order and optimising your weekly work so that you have more time, and space, for creativity.

Genius allows you to choose between two product lines, below we will look at the Plus version that encloses all multifunction programs present in the Genius line.

Chilling
Genius quickly cools your products, directly from the oven, up to the safe threshold of 3°C, in total respect of the structure and product properties.
Freezing
Genius quickly freezes the product core at -18°C, ensuring you the option of long conservation, keeping the properties of the product unchanged.
Defrosting
Defrost your products in total safety. Indicate the thickness and for when you want it ready, the rest is done by Genius, your cold assistant.
Rising
Ideal for overnight or postponed processes, Genius allows you to program your rising cycle, indicating the desired day and time to finish the job.
Low Temperature Cooking
Ideal for overnight processes, cooks your products at low temperature, in total respect of their properties. Once finished, it will go to the cooling or freezing phase, releasing you from the obligation to be present and keeping the product at the peak of its quality.
Pasteurisation
Genius allows you to work professionally at all conservation levels, giving you the opportunity of pasteurising and cooling the products, in full compliance with the safety regulations.
Dehydration
Genius gives a touch of fantasy to your creations with fresh products dehydrated according to your needs.
